Huitlacoche is also known as Cuitlacoche or Mexican fungus and is pronounced 'weet-la-coh-cheh'.
This is a delicacy in Mexico and the fungus causes the corn kernels to swell up into mushroom-like growths called 'galls'.
Huitlacoche has a soft velvety texture with a pungent earthy, sweet yet savoury woody taste. Ideal for use in omelettes, taco and tamale fillings, or simply use in place of mushrooms with beef, chicken, cheese or blend with cream to make a Mexican-style sauce for steaks.
