A New Mexico or Anaheim red chile that has been roasted, peeled and dried.
Traditionally prepared in this manner by the Pueblo Indians, the Chile Pasado is a dark pepper measuring up to 4 inches. The Chile Pasado has a dusty, tasty flavour with sweet ripe apple and tones of liquorice and cherry seed to flavour soups stews and breads.
