Hatch Roasted Whole Green Chile - 765gm

Hatch Green Chile and Chicken Casserole 1 x 765gm can HATCH whole green chiles 1 x 425gm can HATCH green chile enchilada sauce 1 x 425gm can diced tomatoes 3 cups cooked diced chicken 2 cups shredded Monterey Jack cheese (or equivalent) 8 corn or flour MEXI-FOODS tortillas 1 chopped onion Combine the HATCH green chile enchilada sauce, water, chicken, tomatoes and onion in a large saucepan. Stir, and heat at medium temperature until bubbly. Allow to simmer for 15 minutes.
Preheat oven to 200 C. Spread 1/3 mixture into a greased 9 x 13-inch casserole dish.
Lay 4 tortillas over the mixture (tortillas may overlap). Spread 1/3 of the mixture evenly over tortillas and place a layer of HATCH whole green chiles evenly on top of the mixture.
Layer 4 more tortillas on top. Sprinkle 1 cup of cheese evenly over tortillas. If you had any remaining tortillas place over the previous layer and spread any remaining mixture on top.
